This is a presentation of the application of gas chromatography with mass spectrometric detection (GC/MS) for the analysis and characterization of essential oils with a particular emphasis on chamomile. Analysis of essential oils can be performed by a variety of techniques; however, in this presentation the advantages of GC/MS will be discussed.
